Creamy Tomato Soup – Cream of Tomato Soup

Ingredients

1 cans or 400g of canned tomatoes
2 shallots
3 cloves garlic
1 beef/chicken essence cubes
1 bay leaf
100ml of whipped cream or cooking cream
Olive oil or cooking oil
1 small spoon of basil leaves or dried basil
1 teaspoon of sugar
Salt, to taste
Freshly ground black pepper, to taste

Method

  1. Chop onion and garlic.
  2. Heat a little oil in a pot and fry the onion until it wilts and starts to look crisp on the edges, about 7-10 minutes.
  3. Add the garlic and cook for a few more minutes.
  4. Put the tomatoes in the tin and mash them so that they break up more easily.
  5. Add 2 cup or 500ml of water, beef/chicken essence, and bay leaves. Increase the heat and let it boil.
  6. Lower the heat and simmer for a while 20 minutes.
  7. Add basil leaves or dried basil and sugar. Stir until dissolved and simmer for a while 10 another minute until the tomatoes seem to break down and the soup thickens a little.
  8. Use a hand blender or regular blender to process the soup until smooth.
  9. Taste the soup and add salt, pepper, and added sugar, if needed.
  10. Reheat the soup before serving.
  11. For creamy soup, mix in whipped cream or cooking cream and sprinkle with extra basil leaves or dried basil.
