Simple Chicken Rendang for beginners

Chicken rendang is a popular dish in Southeast Asian cuisine that is famous and originates from Padang,Indonesia. This recipe is the easiest rendang recipe and is suitable for those who are just starting to learn how to cook. With this recipe, and just need to add the ingredients and cook slowly.

Ingredients

2 kg of chicken meat (free range or older chickens are more suitable)
6 tablespoons ground dried chillies
5 tablespoons (150g) toasted coconut paste ( kerisik )
500g coconut milk
4 Turmeric leaves, sliced
5 lemongrass stalks, sliced
2 pieces of tamarind slice
30 kaffir lime leaves, sliced
1 tablespoon coriander
1 big pot of sweet cumin
1 tablespoon cumin
2 cup of water (500ml)
3 tablespoons of sugar (according to taste)
1 1/2 spoons of salt (according to taste)
1 teaspoon of seasoning powder (choice)

Ingredients to grind/blend
3 onion seeds
9 cloves garlic
5 candle nuts
3 turmeric inch
2 thick slices of galangal
5 thick slices of ginger

Method

  1. In the blender, grind together with lemongrass slices, ginger, galangal, turmeric, hard fruits, garlic, onion together 1 cup of water until smooth.
  2. In a large pan, Add the chicken and mix in the ground chili, ground material, cilantro, fennel seed, and cumin.
  3. Cook on medium heat until and stir well, then add coconut milk and 2 cup of water.
  4. Increase the heat until it boils, then lower the heat and add crackling, sliced ​​turmeric, sour cream, kaffir lime leaves, gula, salt, and seasoning powder.
  5. Stir the ingredients and cook over low heat, stir each 5-10 minutes, During 45 minutes or until the rendang thickens and the chicken is tender.
  6. If the chicken is still not tender, add a little more water to continue cooking the chicken until tender.
  7. Make sure you taste the rendang and adjust the seasoning to your liking by adding salt or sugar.
