One of my favorite dishes in Japanese restaurants is garlic fried rice. The preparation method is almost the same as Chinese fried rice , there is only a slight difference in terms of ingredients. Among the ingredients that give this Japanese fried rice a unique flavor are Japanese soy sauce or Shoyu and also butter. For best results, I recommend using Japanese rice that is cooked a day in advance and stored in the refrigerator.
This recipe does not use any meat or seafood based protein, only eggs. Therefore garlic plays an important role to produce delicious flavors. However, if you like you can add your favorite protein like shrimp, stock or chicken.
While sauteing the garlic, make sure low medium heat is used but when frying the rice, make sure a large fire is used. A strong fire is needed to dry the rice to produce the best fried rice.
Ingredients
700g rice ( As good as what was cooked yesterday )
14 cloves garlic ( chopped )
4 an egg
2 tablespoon of Japanese soy sauce
1 tablespoon fish sauce
1 tablespoons of Aji-Shio white pepper
1 butter knife
4-5 scallions ( sliced )
Method
- Heat some oil in a pan and fry the garlic. Use medium low heat so that the garlic doesn't burn.
- When the garlic starts to look crispy, add butter. This will lower the temperature of the oil and prevent the garlic from burning.
- Add the eggs once the garlic is crisp and pale brown. Stir to mix the eggs and garlic. Use simple fire.
- After the eggs are cooked and mixed with garlic, add rice.
- Mix the rice with the egg and garlic mixture. Make sure each grain of rice is coated with the egg and garlic mixture.
- Increase the flame to maximum, and add Japanese soy sauce on the side of the pan. Followed by fish sauce. Mix well.
- Add Aji-Shio white pepper powder and mix well.
- Finally, add the sliced onions.
- Japanese garlic fried rice is ready to serve.
