Sweet Sour Sea Bass

Cooked fish sour sweet or sweet & sour is a popular dish at local seafood restaurants. There are a variety of ways to cook this dish that vary from cooking techniques to the ingredients used according to the area..

This recipe is one that is easy and fast to prepare at home using only a few basic ingredients that can be in the kitchen. For this recipe I like to use sea bass but you can use any fish you like. The important thing , fish must be fresh.

Ingredients

800g Fresh fish
20g of wheat flour
1 teaspoons of salt
1 teaspoon of Aji-Shio white pepper

Ingredients for sos
1 Tomato seeds are cut into small pieces
4 chopped garlic cloves
1 small onion seeds sliced
1 sliced ​​red chili
40g (2 tablespoons) chili paste
60g (2 tablespoons) sauce which
60g (2 tablespoons) you are tomato
100ml water
2 teaspoon of sugar
1 teaspoon of sweet soy sauce
1 teaspoon of seasoning powder ( If you want)

Method

  1. To make it easier to cook fish, kelarkan ikan.
  2. Sprinkle a little salt, aji shio white pepper powder and a little wheat flour. This will give a crispy thin coating on the fish after frying. Apply evenly.
  3. Turn the fish over and repeat for the bottom of the fish.
  4. Heat the oil in a pan. When it's hot, Put in the fish. Don't use too much oil.
  5. Turn the fish over and cook the top.
  6. When both sides of the fish are crispy and cooked, remove and set aside while we prepare the sauce.
  7. Remove some of the fish frying oil and sauté the garlic.
  8. When the garlic starts to turn yellow, add small onions, chili paste.
  9. Then add the tomatoes that have been cut earlier, and red chilies.
  10. After that add the chili sauce, you are tomato
  11. Add 100ml of water, 2 teaspoon of sugar and 1 teaspoon of seasoning powder if you like. If you do not want to use seasoning powder , replace with 1/2 teaspoon of salt or to taste.
  12. Stir until smooth and cook until slightly thickened. Last but not least 1 teaspoon of sweet soy sauce. 13. The sauce is now ready and can be poured over the fish that has been fried.
  13. Garnish with chopped coriander leaves and scallions. Sweet and sour fish is ready to be served with hot white rice.
