Spicy Fried Sausages

Chicken or meat sausages are now a favorite food among Malaysians either as a snack or cooked as an additional side dish. There are various brands and types of sausages on the market for every taste. Among the most popular sausages is the Frankurter type sausage originating from Frankfurt, German. This type of sausage is made from half -cooked spicy minced meat. The local Frankfurter sausage has been modified to suit Malaysian tastes and is quite different from the original ones from Germany.

This spicy fried sausage recipe I am sharing was inspired by a sausage dish served at golf clubs and rest houses in the 1980s and many of this generation will be familiar with this dish. It's basically fried sausages with onions, pepper and tomato or chili sauce.

The secret to a good peppered fried sausage is to use quality sausages and make sure the onions are well cooked until dark and caramelised. This will give the best results.

Ingredients

400g (8 ) sausage
300g (1 ) Holland onions coarsely sliced
200g (1 ) chopped Bengal pepper
20g (2 cloves) chopped garlic
2 sliced ​​red chili
3 tablespoons tomato/chili sauce
2 tablespoons of sweet soy sauce
1/2 teaspoon of Aji-Shio white pepper
A little spring onion /scallions

Method

  1. Heat a little oil in a pan to sauté. When the oil is hot, add the scallions.
  2. Add 1/2 teaspoon of salt to speed up the cooking of onions. Salt will draw water out of the onion so that it crisps faster.
  3. Use a medium flame so that, onions are not charred. Onions will take time 8-10 minutes to wither so we have to be patient. A common mistake is not to making sure the onions are cooked enough.
  4. When the onions have started to look yellowish, add the garlic.
  5. Add the sliced ​​red chillies, if you like it more spicy, you can use rice chili.
  6. Add yellow bell pepper.
  7. Add the sausage that has been cut earlier and mix well.
  8. Add 3 tablespoons of tomato sauce, if you want more spicy, you can replace it with chili sauce.
  9. Add 2 tablespoons of sweet soy sauce and 1/2 teaspoon of Aji-Shio white pepper powder
  10. Finally, add a little onion.
  11. Mix well and serve immediately.
