Lace Pancake ( Roti Jala ) made without coconut milk

Roti Jala or Lace Pancakes is a popular dish and is easily prepared with just a few basic ingredients. Often eaten with curry but it can also be eaten with Asam Pedas ( Spicy Sour gravy) if you want to try something different.

This roti jala ot lace pancake recipe does not contain coconut milk but is replaced with evaporated milk. The batter needs to be rested for 30-60 minutes before 'weaving' for best results because if not rested, the batter will be to thin to 'weave' on the pan..

Ingredients

250g (2 cups) Wheat flour
500ml (2 cups) air
125ml (1/2 cups) evaporated milk
1 an egg
1 teaspoons of salt
Yellow dye
3 strands of pandan leaves (tied)

Method

  1. All ingredients will be blended in a blender. Add 1 cup of water. Make sure water is added first and not flour so that the dough is easily mixed and blended. Followed 1 a cup of wheat flour.
  2. Add 1/2 an egg . 1/4 a cup of liquid milk, 1/2 teaspoon of salt and a little yellow dye. There are people who like to use a little turmeric.
  3. Cover the blender and blend until smooth. Using a blender will ensure that the batter is well mixed.
  4. Repeat for the rest of the ingredients . Avoid grinding the ingredients all at once, blend half (50% first) because if we grind all the ingredients at once, the batter may be less fine and lumpy.
  5. Rest the batter for 30 minutes or up to 1 hour so that the batter becomes more viscous and easy to 'weave'. The gluten protein formed when flour is mixed with water takes time to form. If not rested, the dough will be too runny and difficult to 'weave'.
  6. To create the 'woven' net effect, use a slotted bottle. Pour in the batter and cover.
  7. Use the pandan leaves that were tied earlier to give a fragrant smell to the cooking oil before we apply it on the pan.
  8. Avoid using too much oil.
  9. Deliver the batter bread in a continuous circular motion. Carefully pour in an unrestricted movement to create a nice mesh effect. This requires a lot of practice, but it is not too difficult.
  10. When the lace pancakes starts to be evenly colored , they can already be lifted out. And stratified like this.
  11. This recipe is enough for for 6 servings. Some like to fold each lace pancake before serving. It depends on personal preference. I prefer to be stacked and cut like a cake.
