Spicy Kampung Fried Rice Recipe Without Vegetables

Nasi goreng kampung is one of the famous traditional dishes in Malaysia. The village fried rice that I am sharing is a simple and quick version to prepare, especially for those who have just entered the world of cooking. It only uses a few ingredients that are easily available and also does not require vegetables. It's a favorite of my kids and I'm sure it will be a favorite of your family too.

An important tip to remember is to use cold rice before frying. Freshly cooked rice is not suitable for making fried rice because it will become limp and lumpy. So, make sure your rice is pre-cooked and refrigerated overnight before frying for best results.

Don't forget to fry the stir-fried ingredients well and make sure they are cooked enough without being too crispy. Salt also plays an important role in this recipe, because it helps draw water out of the stir-fry and speeds up the cooking process. Always stir the stir-fry so that it cooks evenly and gets a nice aroma.

If you like spicy, you can adjust the amount of chili padi in this recipe. You can also add vegetables such as kale or cabbage at the final stage of cooking to provide variety and additional nutrition. If you want to add more flavor in this dish, you can try adding chicken or shrimp according to your taste. Hope you enjoy it!

Ingredients

800g rice (approximately 2 rice pots), cold
4 an egg
2 shallots
13 birds eye chili
3 cloves garlic
50g anchovies
Oil for sautéing
Salt to taste
Seasoning powder (choice)

Method

  1. Grind or mash shallots, garlic, chili, and anchovies until crushed. Can also not need to grind very fine.
  2. Heat some oil in a pan to fry.
  3. Fry the ground ingredients in hot oil. Reduce the heat so it doesn't burn. Make sure the ingredients are cooked enough but not too crunchy.
  4. Add 1 a teaspoon of salt into the stir-fry and mix. The salt will help draw the water out of the stir fry ingredients and speed up the cooking process. Stir well.
  5. After 3-4 minutes, the stir-fried ingredients will look a little dry. Push the stir fry to the side of the pan.
  6. Add the eggs to the pan slowly. Do not stir the eggs too quickly, let it form white and yellow stripes. The eggs will begin to cook completely.
  7. Mix the eggs with the stir-fry ingredients until combined.
  8. Add the rice to the pan. Mix the rice, egg, and stir-fry ingredients so that they are flat. Separate the rice using a spoon or spatula.
  9. Turn up the heat and add 1 another teaspoon of salt, or to taste. If you like, can add a little seasoning powder. Mix all ingredients well.
  10. If you want to add vegetables such as kale or cabbage, add at this stage. However, if you like the blank version, can continue without vegetables.
  11. If you want to add meat such as chicken or shrimp, can follow each other's taste.
  12. Village fried rice is ready to serve. Sprinkle fried anchovies as garnish.
