Easy Fried Teow Kuey

Malaysia is famous for its various delicious cuisines, and one of the most popular dishes is Kuey Teow Goreng. This popular dish can be enjoyed for breakfast, lunch or dinner. At the origin of food outlets or street food, Kuey Teow Goreng has become a favorite dish of every layer of the local community as well as tourists from abroad.

To make a good Kuey Teow Goreng, it is important to use fresh ingredients. One important tip is to avoid washing the noodles with water before cooking, as this can cause the noodles to become too soft and lose their texture. Vice versa, break up the kuey teow with your fingers to prevent clumping. Another important step is to fry the onions and chillies until they are crisp and slightly dark in color which adds flavor to the dish.

In this recipe, we will show you how to prepare Kuey Teow Goreng, so you can enjoy this classic Malaysian dish at home.

Ingredients

1 kg mee Teow
100g shrimp
100g fish cake
100g bean sprouts
50g chives
1 shallots
9 cloves garlic
3 an egg
3 tablespoon dried chilies
3 tablespoon of oyster sauce
5 tablespoons of liquid soy sauce
3 tablespoons of sweet soy sauce
2 tablespoon fish sauce
1 teaspoon pepper

Method

  1. Cut shallots and garlic into small pieces so that they are easy to grind, put some water in the blender and grind until smooth. Set aside first.
  2. Break up the Kuey Teow with your fingers so that it doesn't clump while frying.
  3. Heat the oil and saute the shallots and garlic that were ground earlier.
  4. When the stir fry ingredients are dry, Add ground chilies. Frying onions and chilies is an important step in cooking kuey teow goreng. Fry the onions and chilies until they are really crisp and dark, but not until burnt.
  5. Then add the oyster sauce, sweet soy sauce and thick soy sauce.
  6. Then add the fish sauce and mix well.
  7. Add kuey teow and mix to mix with the soy sauce and chili mixture. Turn from bottom to top but do not mix too often so that the kuey teow does not crumble.
  8. Add the fish cake and mix. Then add shrimp or any meat you like like chicken, squid or clams. Push aside, and pour the egg.
  9. Mix the eggs slowly as. When the egg is half cooked, mix with kuey teow so that the egg is fully cooked. Add pepper and mix well. Push aside and add bean sprouts. Mix kuey teow and bean sprouts.
  10. Add chives and mix again. Serve immediately so that the bean sprouts are still crispy.
