Sauteed Sardines

This sauteed sardines recipe is very easy to prepare with just a few basic ingredients available in the kitchen.

In this recipe the sardines are separated because we will fry the sardines separately to dry the fish. Frying the fish will enhance the flavor of the sardines. If we do not segregate the sauce, the temperature of the oil will not be hot enough to fry the fish.

Sardines are actually among the most nutritious fish due to their high protein and calcium content. Sardines are also rich in omega fatty acids 3 which is good for heart health.

Among the advantages of sardines are sardines sold in cans or packets , all wild and non -farmed sardines. Sardines also eat only plankton and therefore, the content of toxic substances in sardines is much lower than that of fish such as cod (Tuna ) and salmon.

Ingredients

1 cans/packets of sardines in tomato sauce (425g)
1/2 shallots
1.5cm ginger
3 cloves garlic
1 green chili
1 red chili
2 tablespoons of sweet soy sauce
1 teaspoon of tamarind paste
Juice of 1 musk lime seeds
1 teaspoons of salt ( to taste )
2 teaspoon of sugar ( to taste )

Method

  1. Separate the sardines from the tomato sauce. Drain as much tomato sauce as possible. Set aside the tomato sauce first.
  2. Heat a little oil to fry the sardines, don't put too much oil.
  3. Add the sardines. Be careful as the oil will splash as there is still a little more sauce on the fish. If too much oil is used the effect will be more noticeable. Cover briefly while the fish is frying, but do not take too long as the fish will become dry and hard.
  4. When the fish and crisp and golden yellow, turn the fish over and dry the other side. Use only medium heat to avoid scorched fish.
  5. When both sides of the fish have crisp, push the fish aside the pan and add the onions, garlic and ginger. Add a little more oil for frying.
  6. Saute until the onions are wilted only and add the sliced ​​chillies.
  7. Add the tomato sauce that was separated earlier.
  8. Add 2 tablespoons of sweet soy sauce. One tablespoon of tamarind paste. Add a little water to dissolve the remaining tamarind paste.
  9. Add juice 1 musk lime seeds, 1 teaspoon of salt or to taste.
  10. Add 2 teaspoons of sugar to balance the sour taste from the tomato sauce, tamarind and lime. Sugar plays a role not only as a sweetener but also as a flavor balancer. Can reduce or increase according to their tastes.
  11. Sauteed sardines are ready. Serve immediately.
