Turmeric Fried Meat Recipe

Turmeric fried meat is a dish that is basically very simple but requires proper technique. A common mistake is to cook the meat for too long. This will result in tough and tough meat.

To prevent the meat from overcooking, the meat is half cooked separately with the other ingredients before being combined at the end of the cooking process. The choice of meat also plays an important role in the preparation of turmeric fried meat, it is better to use betel nut or tenderloin because it is very soft and quick to cook.

If using other parts of the meat, make sure the meat is thinly sliced. Coat it with baking soda and cornstarch as a meat softener before frying. This technique is often used by cooks in Chinese restaurants.

Turmeric Fried Meat Ingredients

800g Beef stalk ( thinly sliced)

2 hollandaise onion seeds ( coarsely sliced )

5 cloves garlic ( chopped )

1 inches ginger( coarsely sliced )

3 red or green chili seeds ( coarsely sliced )

5 long bean stalks ( cut into small 4cm)

½ carrot stalks ( cut into small 4cm )

4 teaspoon of turmeric powder

2 teaspoons of salt

1 teaspoon of sugar

½ teaspoon of seasoning powder ( If you want )

Cooking Methods

  1. To make it easier to slice the meat thinly, store in the freezer for 3 minutes before slicing.
  2. Prepare the meat with 1 teaspoon of salt and 3 small spoon of turmeric. Mix well and leave to 30 minutes.
  3. Heat a little oil. When the oil is hot, fry the marinated meat. Do not cook all the meat at once but cook little by little so that the meat is crispy.
  4. Repeat until all the meat has been fried and set aside first.
  5. Add a little more oil to sauté. Add the scallions.
  6. When the onions start to look wilted, add chopped garlic, and ginger.
  7. Add chopped chili. Then add the carrots and sauté for a few minutes. Followed by long beans.
  8. Add the fried meat and mix well.
  9. Add the balance 1 teaspoon turmeric and flatten. Add 1 teaspoon of salt or to taste, 1 teaspoon of sugar or to taste and 1/2 teaspoon of seasoning powder if you like.
  10. Mix well for 1-2 minutes more and the turmeric fried meat is ready to serve.
