Soy sauce cooked chicken is a very popular chicken dish and there are a variety of ways to prepare it. The recipes I will share are quite different with some rarely used techniques.
The first, chicken is not marinated with salt, but with chicken essence to give the chicken a stronger flavor. For those who do not like to use chicken essence can be replaced with regular salt.
Both, i fry the chicken with a little oil but using a strong flame. This is intended simply to dry the outer surface of the chicken only to give it a delicious flavor. The chicken will be fully cooked in the soy sauce later. Anything chicken meat, fried beef or lamb will taste better than cooked in gravy alone.
Ingredients
800g chicken
40g (4 cloves) chopped garlic
3 red peppercorns sliced
15g (1 small spoon) finely sliced ginger
300g large onions coarsely sliced
2 The tomato fruit seeds are cut 4
10 ( 1 tablespoons ) turmeric powder
1 chicken stock cube
3 cardamom seeds
7 cloves
1 cinnamon stick
90ml (6 tablespoons) sweet sauce
15ml ( 1 tablespoons ) sauce which
Soup leaves for garnish
Method
- Dissolve the chicken stock cubes in 2 tablespoon of hot water. Make sure it dissolves completely.
- Pour over the chicken and add the turmeric powder. Mix until smooth and braise for 10-45 minutes.
- Heat a little oil ( 3 tablespoons ) in a frying pan. Make sure the oil is really hot and fry the chicken. Our purpose is simply to dry the outer surface of the chicken and not to cook the chicken completely.
- When the surface of the chicken is dry and brown, remove. Make sure the chicken is fried in small batches, if too much chicken is fried at once, the outer surface of the chicken is difficult to crisp.
- Add a little more oil to the sauté and add the onions.
- When the onion is wilted, add garlic and red chilli.
- Then add the cloves, cardamom and cinnamon and saute.
- Add the ginger and sauté until the garlic appears to turn yellow.
- Add 750ml (3 cup of water), 6 tablespoons of sweet soy sauce and 1 tablespoons chili sauce.
- Add the fried chicken pieces and simmer for a while 20 minutes.
- Add the tomatoes and mash 10 another minute or until the gravy thickens.
- Soy sauce cooked chicken is ready to serve and garnished with soup leaves.
